This Ghanaian variety of callaloo has been a favourite for both eater and farmer alike. We have been growing and saving seed from this variety since 2021. Also known as Alefu (Ghana) or Efo Tete (Nigeria), this cooking green has the nuttiness and bite typical for an amaranth green. Callaloo is perfect for stews or sautéing. We find growing this plant 6in - 12in is ideal. This ensures the plant doesn’t get too big and allows for multiple cuttings before the stems become too tough and stringy. In contrast cow tongue callaloo, this variety has slightly wide leaves that have a more a light green matte colour compared to their more glossy counterparts.
